Colcannon is, to the best of my knowledge, a dish peculiar
to Dublin as is ‘coddle’. The former is made usually on
Shrove Tuesday and is a delicious mixture of spuds, bright
green cabbage (my granny had the common habit of
putting bread soda in it to ensure its colour) and diced
onions, served up if the family could afford it with bacon.
As a matter of interest, coddle is a form of stew made up
of rashers of bacon, pork sausages, onions and potatoes
boiled up, perhaps, with a touch of Victorianesque Bisto
Well,[D] did you ever make col[D7]cannon made with [G]lovely pickled [Em]cream
With the [C]greens and scallions [G]mingled like a [Em]picture in a [C]dream
Did you [D]ever make a [D7]hole on top to [G]hold the  meltin' [Em]flake
Of the [C]creamy flavored [G]butter that our [C]mothers used to [D7]make

Oh[D] you [G]did, so you[C] did
so did [Bm]he and so did [Am]I
And the[D7] more I think about it

Oh [D]weren't them the happy days
when[G] troubles we knew[Bm] not
And or[D7] mother made colcannon
in the [G]little skillet[D] pot

Well, did you ever take potato cake
and boxty to the school
Tucked underneath your oxter with
your books, your slate and rule
And when teacher wasn't looking'
sure a great big bite you'd take
Of the creamy flavored soft and melting'
sweet potato cake
Chorus

Well did you ever go a courtin' boys
when the evenin' sun went down
And the moon began a peepin'
from behind the Hill O' Down
And you wandered down the boreen
where the clúrachán was seen
And you whispered lovin' praises to
your own dear sweet cáilín
